Ingredients

  • 1 (1-pound) head napa cabbage , halved and cut into 2-inch pieces
  • 1 tablespoon kosher salt
  • 2 scallions (white and tender green parts only), halved lengthwise
  • 1 carrot , very thinly sliced (about 3/4 cup)
  • 2 large red Fresno chiles , seeded and thinly sliced (about 1/4 cup)
  • 1 tablespoon rice vinegar
  • 1 1/2 cups 7UP soda
  • 1 bunch of watercress , thick stems discarded
