Babette Friedman’s Apple Cake

Ingredients

  • 3 Fuji or Gala apples (1 1/2 pounds)—peeled, cored and sliced 1/2 inch thick
  • 1 tablespoon Calvados
  • 1 teaspoon finely grated peeled fresh ginger
  • 1/2 teaspoon ground cinnamon
  • 2 1/4 cups plus 2 tablespoons sugar
  • 3 sticks unsalted butter, at room temperature, plus more for brushing
  • 1/4 teaspoon kosher salt
  • 3 large eggs
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 cup sugar
  • 2 tablespoons heavy cream
  • 2 tablespoons unsalted butter
