Baked Feta in Tomato Sauce

Ingredients

  • 8 ounces good-quality feta cheese, drained
  • 1 cup tomato sauce (storebought or homemade)
  • 1/4 cup pitted chopped Kalamata olives
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1/4 teaspoon crushed red chili flakes, or to taste
  • Freshly ground black pepper to taste
  • 2 large eggs (optional)
  • 1 tbsp olive oil, plus more for drizzling
  • 1 small shallot, thinly sliced, separated into rings
