Beefy Cheesy Sweet Potatoes With Kimchi
Ingredients
- 2 lb. sweet potatoes (about 4 medium or 6 small), scrubbed, cut into ½"-thick wedges

- 1 lb. ground beef

- 4 garlic cloves, thinly sliced
- 2 Tbsp. tomato paste
- 14 oz. Napa cabbage kimchi, coarsely chopped (if kimchi is already chopped, leave it in bigger pieces), divided
- 12 oz. extra-sharp white cheddar, coarsely grated
- ½ cup sliced pickled jalapeños, coarsely chopped
