Bulgogi Tofu Burgers

Ingredients

  • 1 English hothouse cucumber, thinly sliced on a diagonal
  • ½ tsp. Diamond Crystal or ¼ tsp. Morton kosher salt
  • 6 Tbsp. unseasoned rice vinegar, divided
  • 2 14-oz. blocks extra-firm tofu, drained
  • 1 ripe pear, cored, coarsely chopped
  • 1 2" piece ginger, peeled, thinly sliced
  • 2 garlic cloves
  • ¼ cup soy sauce
  • 2 Tbsp. toasted sesame oil
  • 1 Tbsp. brown sugar
  • 1 Tbsp. gochugaru (coarse Korean red pepper powder)
  • 3 Tbsp. vegetable oil, plus more for grill
  • 2 Tbsp. gochujang (Korean hot pepper paste)
  • 6 hamburger buns, split
  • ⅓ cup mayonnaise
