Char-Grilled Lemon, Spinach And Feta Pizzas

Ingredients

  • 1 tablespoon olive oil
  • 2 cloves garlic, crushed
  • 2 teaspoons finely grated lemon rind
  • 2 x 400g (bunches) spinach, trimmed
  • olive oil, extra, for brushing
  • 2 cups (200g) grated mozzarella
  • 1 white onion, thinly sliced
  • 200 g feta, sliced
  • 2 lemons, halved
  • 2 teaspoons dry active yeast
  • ½ teaspoon caster (superfine) sugar
  • 2 tablespoons lukewarm water
  • ¼ cup (70g) natural yoghurt
  • 1 cup (150g) plain (all-purpose) flour, sifted
  • ½ teaspoon sea salt flakes
