Classic Cabbage Kimchi

Ingredients

  • 6 pounds Napa cabbage
  • 4 tablespoons kosher salt
  • 2 tablespoons light brown sugar
  • 1/3 cup minced garlic
  • 1/3 cup minced fresh ginger
  • 1/4 cup hot smoked paprika (pimentón)
  • 1/4 cup Korean chile powder
  • 1 tablespoon crushed red pepper flakes
  • 2 tablespoons freshly squeezed lime juice
  • 1/2 cup Asian fish sauce
  • 1/2 cup brine shrimp (available in a jar at Asian food stores), finely chopped
  • 2 bunches scallions, cut into 1/2-inch pieces (about 12 scallions)
