Courgette, green bean & feta salad

Ingredients

  • 3 medium courgettes (about 600-700g), sliced 2cm-thick
  • 300g green beans, trimmed
  • 2 x 200g blocks of feta, each cut in half
  • 4 tbsp olive oil
  • 4 garlic cloves, chopped
  • bunch of thyme, leaves picked
  • 2 red chillies, finely chopped (optional)
  • 3 oranges, zested
  • 50g fresh breadcrumbs
  • 75g hazelnuts, roughly chopped
  • 4 tbsp extra virgin olive oil, to serve
