Courgette, green bean & feta salad
Ingredients
- 3 medium courgettes (about 600-700g), sliced 2cm-thick
- 300g green beans, trimmed
- 2 x 200g blocks of feta, each cut in half
- 4 tbsp olive oil
- 4 garlic cloves, chopped
- bunch of thyme, leaves picked
- 2 red chillies, finely chopped (optional)
- 3 oranges, zested
- 50g fresh breadcrumbs
- 75g hazelnuts, roughly chopped
- 4 tbsp extra virgin olive oil, to serve
