  • 1 jalapeno, stemmed and chopped
  • 1 green onion, chopped
  • 1 handful cilantro, chopped
  • 1/2 teaspoon cumin, ground
  • Salt and pepper
  • 1/2 bunch of kale, tough stems removed and chopped
  • 2 flour tortillas
  • 3 teaspoons butter
  • 1 1/2 handfuls of melting cheese (jack, cheddar, or Chihuahua)
  • 1 avocado, sliced
  • 1 tablespoon sour cream
