Ingredients

  • For the sauce:
  • 1 medium garlic clove
  • 1/2 teaspoon salt
  • 1 cup coarsely chopped cilantro
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 1/8 teaspoon cayenne
  • For the steak:
  • 1 teaspoon ground cumin
  • 1/2 teaspoon black pepper
  • 2 pounds skirt steak, cut to manageable grilling sizes (you may have to do batches)
