Ingredients

  • 1 pound of sweet potatoes, peeled, cut into matchsticks
  • 1 cup kimchi, thinly sliced
  • 1 1/2 teaspoons garlic, finely chopped
  • 1 1/2 tablespoons serrano chiles, stemmed and sliced
  • 1 cup scallions, thinly sliced
  • 1 egg, lightly beaten
  • 1 teaspoon kosher salt
  • 3/4 cup all-purpose flour
  • 1/2 cup canola oil
  • For the dipping sauce:
  • 1/3 cup soy sauce
  • 2 tablespoons mirin
  • 1 tablespoon sugar
  • 4 teaspoons rice vinegar
  • 1 tablespoon lemon juice
