Kalbi Jjim (Korean Braised Short Ribs)
Ingredients
- 8 (about 1 ounce ) dried shiitake mushrooms
- 1 cup hot water
- 5 to 5 1/2 pounds meaty bone-in beef short ribs , cut into 1 1/2x2 1/2-inch pieces
- 1 tablespoon kosher salt
- 1 teaspoon black pepper
- 2 teaspoons canola oil
- 1 Asian pear , peeled, cored, and chopped
- 10 cloves garlic
- 1 medium yellow onion , chopped
- 1 1-inch piece ginger , peeled and chopped
- 2 scallions , ends trimmed and halved crosswise
- 3/4 cup soy sauce
- 1/4 cup mirin
- 3 tablespoons dark brown sugar
- 2 tablespoons honey
- 3 large carrots , peeled and cut 3/4-inch-thick on a bias
- 1 small (1- pound ) daikon radish , peeled and cut crosswise into 3/4-inch slices, then quartered into wedges
- 1 scallion , thinly sliced
- 1 tablespoon toasted sesame oil
