Kalbi Jjim (Korean Braised Short Ribs)

Ingredients

  • 8 (about 1 ounce ) dried shiitake mushrooms
  • 1 cup hot water
  • 5 to 5 1/2 pounds meaty bone-in beef short ribs , cut into 1 1/2x2 1/2-inch pieces
  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper
  • 2 teaspoons canola oil
  • 1 Asian pear , peeled, cored, and chopped
  • 10 cloves garlic
  • 1 medium yellow onion , chopped
  • 1 1-inch piece ginger , peeled and chopped
  • 2 scallions , ends trimmed and halved crosswise
  • 3/4 cup soy sauce
  • 1/4 cup mirin
  • 3 tablespoons dark brown sugar
  • 2 tablespoons honey
  • 3 large carrots , peeled and cut 3/4-inch-thick on a bias
  • 1 small (1- pound ) daikon radish , peeled and cut crosswise into 3/4-inch slices, then quartered into wedges
  • 1 scallion , thinly sliced
  • 1 tablespoon toasted sesame oil
  • Steamed rice
