Golden Beet & Cucumber Salad with Feta

Ingredients

  • 1 ½ pounds medium golden beets, trimmed, peeled and cut into thin wedges (about 12 per beet)
  • ¼ cup extra-virgin olive oil
  • 3 tablespoons cider vinegar
  • ½ teaspoon honey
  • ½ teaspoon salt
  • ¼ teaspoon ground pepper
  • 2 cups thinly sliced English cucumber (1 medium)
  • ¼ cup finely chopped red onion
  • ¼ cup crumbled feta
  • 2 tablespoons slivered basil
