Granny Karate's 'Korean' Chicken Remedy Soup (For the Bachelor's Lady's Cold)
Ingredients
- 2 whole chicken breasts - about 1 lb.
- 3 celery stalks, cleaned and chopped
- 2 carrots, cleaned, peeled and chopped
- 1 1/2 yellow onions, chopped
- 1 teaspoon whole allspice
- 1 teaspoon whole peppercorns
- 6 tablespoons pearl barley, rinsed
- 1/2 bunch of fresh parsley, leaves removed. Keep the stems.
- 1 -3 dashes coconut aminos, soy sauce or tamari
- 10 cups chicken broth (I use Imagine brand, plus a combination of 1-2 cups of frozen leftover homemade chicken stock if I have it on hand)
- 2 small bay leaves
- 1/3 cup kimchee per serving, as garnish
