Granny Karate's 'Korean' Chicken Remedy Soup (For the Bachelor's Lady's Cold)

Ingredients

  • 2 whole chicken breasts - about 1 lb.
  • 3 celery stalks, cleaned and chopped
  • 2 carrots, cleaned, peeled and chopped
  • 1 1/2 yellow onions, chopped
  • 1 teaspoon whole allspice
  • 1 teaspoon whole peppercorns
  • 6 tablespoons pearl barley, rinsed
  • 1/2 bunch of fresh parsley, leaves removed. Keep the stems.
  • 1 -3 dashes coconut aminos, soy sauce or tamari
  • 10 cups chicken broth (I use Imagine brand, plus a combination of 1-2 cups of frozen leftover homemade chicken stock if I have it on hand)
  • 2 small bay leaves
  • 1/3 cup kimchee per serving, as garnish
