Ingredients

  • 1/4 cup slivered almonds
  • 1 pound green beans
  • 1 large shallot
  • 1/4 cup plus 1 T olive oil
  • 2 tablespoons sherry vinegar
  • 1 teaspoon fresh thyme leaves
  • 4 ounces good quality firm feta cheese
  • thyme flowers (optional)
  • salt and pepper to taste
