  • 5 tbsp. freshly chopped cilantro, divided
  • 1 avocado, diced
  • 1 c. Cooked brown or white rice
  • 4 8" tortillas
  • 1 1/2 c. thinly sliced romaine lettuce
  • Shredded cheddar cheese (optional)
