Har Gao (Shrimp Dumplings)

Ingredients

  • 1 (1″) piece pork fat or slab bacon (optional)
  • 2 1⁄4 tsp. cornstarch
  • 3⁄4 tsp. oyster sauce
  • 1⁄2 tsp. sugar
  • 1⁄4 tsp. sesame oil
  • 1⁄4 tsp. ground white pepper
  • 1⁄2 egg white, lightly beaten
  • 4 oz. shrimp, peeled, deveined, tails removed, finely minced
  • 1⁄4 cup minced water chestnuts
  • 2 tbsp. very thinly sliced scallions (white part only)
  • 1 tbsp. minced canned bamboo shoots Kosher salt, to taste
  • 16 (3 ½”) round gyoza wrappers
  • 1⁄2 cup hoisin sauce
  • 2 tbsp. chopped scallions
