Homemade Lamb Sausages with Rosemary, Sun-Dried Tomatoes and Feta

Ingredients

  • 1 pound ground lamb
  • 1 tablespoon (heaping) freshly minced rosemary, needles only, no stems (stems can puncture the plastic bag when forming the sausage)
  • 1 teaspoon (heaping) minced or pressed garlic
  • 1 tablespoon minced parsely
  • 1/2 teaspoon dried thyme flakes, crushed
  • 4 sun-dried tomato halves, soaked in hot water until plump, drained and chopped
  • Zest from 1/2 lemon
  • 2-3 tablespoons Feta cheese crumbles
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 tablespoon water
  • (Optional) pinch or two dried, red pepper flakes
