  • 2 teaspoons salt , plus more to taste
  • 1 teaspoon olive oil
  • 1 1/2 teaspoons ground black pepper
  • 2 tablespoons fresh thyme leaves, divided
  • 1/4 cup red wine vinegar
  • 1/3 cup balsamic vinegar
  • 3/4 cup , plus 2 tablespoons granulated sugar
  • 1 lemon , zested (1 teaspoon) and juiced (2 tablespoons)
