Orzo With Blistered Green Beans, Burst Tomatoes & Feta

Ingredients

  • Kosher salt
  • 1 cup dried orzo
  • 2 tablespoons extra-virgin olive oil, plus more for drizzling
  • 1/2 pound fresh green beans, trimmed and halved crosswise (not lengthwise, where the green bean is split open)
  • 1 pint grape or cherry tomatoes, halved
  • 1/2 teaspoon red pepper flakes, or to taste
  • 2 tablespoons low-sodium soy sauce
  • 1 small lemon, juiced
  • 1/2 cup crumbled feta
  • 1/4 cup fresh mint, both leaves and tender stems, roughly chopped or torn
  • Freshly ground black pepper
