Pan-Seared Pork Chops with Peach & Avocado Salsa Recipe

Ingredients

  • 3 ripe peaches, pitted and diced with skin on
  • 1 medium ripe avocado, pitted and diced
  • 3-4 tablespoons finely diced red onion
  • ½ tablespoon finely chopped ginger
  • 1-2 jalapeños, seeded and finely diced (optional)
  • ¼ cup extra-virgin olive oil
  • 3 tablespoons lime juice
  • Salt
  • 3 tablespoons oil with a high smoke point like peanut or safflower
  • Four ¾-inch-thick pork chops, at room temperature
  • Freshly cracked black pepper
