Pear-Cranberry Upside Down Cake

Ingredients

  • For Cake
  • 2 tablespoons unslated butter
  • 4 eggs at room temperature
  • 1/2 cup super fine sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon vanilla paste
  • 1/8 teaspoon salt
  • 1 cup sifted cake flour
  • For the Fruit
  • 2 tablespoons unslated butter
  • 1/8 cup light brown sugar
  • 1 tablespoon light corn syrup
  • 4 firm but ripe pears, peeled, quareterd and cored
  • 2 tablespoons fresh orange juice
  • 1/3 cup dried cranberries (or fresh)
