Pretzel Poutine Recipe

Ingredients

  • 3 tablespoons unsalted butter
  • 3 tablespoons all purpose flour
  • 1 onion, minced
  • 1 clove garlic, minced
  • 1 teaspoon fresh rosemary, minced
  • 1 cup smoked beer or other beer of your choice
  • 1 cup chicken or vegetable stock
  • 1 teaspoon sugar
  • 4 pretzel sausage buns, cut into thick "fries"
  • 1 cup fresh cheese curds (or substitute chunks of cheddar or queso fresco if you can't find curds)
  • kosher salt and black pepper, to taste
