Roasted Sweet Dumpling Squash with a Poached Pear

Ingredients

  • For the Poached Pears
  • 2 Bartlett pears - a little under ripe, peeled and halved
  • 2 cups water
  • 2 cups sugar
  • 1 tablespoon pear brandy
  • 1 sprig sage
  • For the Roasted Squash
  • 2 Sweet Dumpling squash, cut in half crosswise
  • olive oil
  • Sea salt and ground pepper to taste
  • 4 tablespoons salted butter
  • juice from 1/2 lemon
  • 4 sprigs sage
