Roasted Sweet Dumpling Squash with a Poached Pear
Ingredients
- For the Poached Pears
- 2 Bartlett pears - a little under ripe, peeled and halved
- 2 cups water
- 2 cups sugar
- 1 tablespoon pear brandy
- 1 sprig sage
- For the Roasted Squash
- 2 Sweet Dumpling squash, cut in half crosswise
- olive oil
- Sea salt and ground pepper to taste
- 4 tablespoons salted butter
- juice from 1/2 lemon
- 4 sprigs sage
