Russian Potato And Dumplings Soup Recipe

Ingredients

  • 1 large onion, finely chopped
  • 3 tbsp. butter
  • 2 carrots, peeled and chopped
  • 2 sticks of celery, chopped
  • 1 sweet green bell pepper, seeded and chopped (optional)
  • 1/2 package of smoked kielbasa, chopped
  • 4 medium potatoes, peeled and diced
  • 5 cups beef stock
  • 5 cups water
  • Salt and pepper to taste
  • For the dumplings:
  • 2/3 cup flour
  • 1/4 tsp. salt
  • 1 tbsp. butter
  • 1 tbsp. chopped fresh parsely
  • 1 egg, beaten
