Saffron-spiced chicken kebabs with spinach salad
Ingredients
- 1/4 teaspoon saffron threads, crumbled
- 50ml fresh lemon juice
- 4 single chicken breast fillets, cut into 2cm pieces
- 50g butter, melted
- Lebanese bread, to serve
- 3 bunches English spinach, ends trimmed, washed, dried
- 125ml (1/2 cup) water
- 200g Greek-style yoghurt
- 2 tablespoons extra virgin olive oil
- 2 tablespoons fresh lemon juice
- 1-2 garlic cloves, crushed
- 1/4 teaspoon caster sugar
