Salmon with Deconstructed Romesco Sauce

Ingredients

  • 2 red bell peppers
  • 1/2 cup olive oil
  • 2 thick slices crusty bread
  • 1 clove garlic, minced
  • 1/2 cup roughly chopped tomato (1 medium)
  • 3 tablespoons slivered almonds
  • 1 tablespoon chopped parsley
  • 1/2 tablespoon sherry vinegar
  • 1/2 tablespoon lemon juice
  • Salt and pepper to taste
  • 4 fillets salmon, about 2 pounds
