- One thumb-size chunk (20g) belacan (Malaysian-style fermented shrimp paste) or terasi (Indonesian-style fermented shrimp paste), plus more as needed
- 2 ounces (60g) large, mild red chiles (about 3 chiles), such as Fresnos, stemmed
