Shakshuka

Ingredients

  • 1/2 big onion, diced
  • 1-1 1/2 bell pepper, diced
  • 1-2 Jalapeño pepper, diced small (depends on spicy you like your like)
  • 4 cloves of garlic, minced
  • 1 1/2 tablespoons ground cumin
  • 1 tablespoon of paprika
  • 1 teaspoon of sugar
  • 2 tablespoons of tomato paste
  • 1 can of diced tomatoes (14.5 ounce can)
  • 1-2 tablespoons of parsley, chopped
  • 1.5 teaspoons of salt
  • Black pepper
  • 4 eggs
  • 2-3 tablespoons of olive oil
