Shanghai dumplings

Ingredients

  • 400g plain flour, sifted
  • 1 tablespoon sunflower oil
  • 2 Chinese cabbage (wombok) leaves (see note)
  • 1 cup (250ml) black vinegar (see note)
  • 2 tablespoons ginger, finely shredded
  • Sliced red chilli, to serve
  • 450g pork mince
  • 125g peeled green prawns, finely chopped
  • 3 spring onions, finely chopped
  • 2 teaspoons caster sugar
  • 2 tablespoons soy sauce
  • 2 teaspoons finely grated ginger
