Simple Lentil Dal with Fresh Ginger, Green Chiles, and Cilantro

Ingredients

  • 1 cup lentils, picked over, washed, and drained
  • ½ teaspoon turmeric
  • 1 teaspoon salt, or to taste
  • 4 cups water
  • 2½ tablespoons canola oil
  • 1¼ teaspoons cumin seeds
  • 2 whole dried red chiles
  • 1 tablespoon minced fresh ginger
  • 1 teaspoon minced garlic
  • 1 fresh hot green chile, minced
  • ½ teaspoon cayenne pepper
  • ¼ cup chopped fresh cilantro
  • Juice of ½ lime or lemon
