Spiced Shrimp Kebabs With Lemony Yogurt

Ingredients

  • 2 Tbsp olive oil
  • 1½ tsp ground coriander
  • ¼ tsp cayenne pepper
  • 1½ lb large shrimp, peeled and deveined
  • ½ pint cherry tomatoes
  • 1 bunch scallions, cut on the diagonal into 3-inch-long pieces
  • Kosher salt
  • ½ cup plain 2% yogurt
  • 2 Tbsp fresh lemon juice
  • 1 Tbsp chopped fresh mint, plus more for serving
  • 4 pitas, warmed
