Ingredients

  • 2 tsp. vegetable oil
  • 2 tsp. vegetable oil
  • 8 oz. ground beef or pork
  • 1½ tsp. Diamond Crystal or ¾ tsp. Morton kosher salt, divided, plus more
  • 1 small onion, coarsely chopped
  • 5 garlic cloves, coarsely chopped
  • 2½ cups drained ripe kimchi (about 1 lb.), chopped into bite-size pieces
  • 1 (heaping) Tbsp. (or more) gochujang (Korean hot pepper paste)
  • 1 Tbsp. fish sauce
  • 1 Tbsp. soy sauce
  • ¼ tsp. toasted sesame oil
  • 2 scallions, chopped
