Ingredients

  • 1 lb. sweet potatoes (about 2 large or 3 medium), peeled
  • 2 large eggs
  • ¾ cup drained finely chopped kimchi
  • ½ cup all-purpose flour
  • 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt, plus more
  • Freshly ground black pepper
  • Vegetable oil (for frying; about 1 cup)
  • ½ cup plain whole-milk Greek yogurt
  • 1 Tbsp. gochujang (Korean hot pepper paste)
