Sweet Corn Pancakes

Ingredients

  • 1 cup (170 g) white or yellow cornmeal
  • 2 tablespoons sugar, honey or maple syrup
  • 1 teaspoon salt
  • 1½ cup (355 ml) buttermilk
  • 2 tablespoons melted butter
  • 1 egg, beaten
  • ½ cup (50 g)all purpose, unbleached flour
  • 1½ teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 cup corn kernels (166 g) about 1 ear of corn
