Tender Yellow Cake

Ingredients

  • 3 large eggs separated and at room temperature
  • 1 1/2 cup sugar
  • 2 1/4 cups cake flour
  • 3 teaspoons Baking powder
  • 1 teaspoon salt
  • 1/3 cup + 1 tbs vegetable oil (I use canola)
  • 1 cup whole milk (1 or 2% work also)
  • 1 1/2 teaspoon pure vanilla extract
