Vegan Apple Buckwheat Pancakes
Ingredients
- 2 tbsp ground flaxseed + 6 tbsp water
- 1 cup Pamela’s buckwheat pancake mix
- 2 tbsp coconut oil, melted (or oil of choice)
- 1/2 cup apple cider (can sub almond milk)
- 1/4 cup unsweetened vanilla almond milk
- 1 tsp cinnamon
- dash of nutmeg
- For the topping:
- 1 tbsp coconut oil
- 2 medium apples cored and diced
- 1 tbsp coconut sugar (or brown sugar)
- 1/2 tsp cinnamon
- pinch of salt
