Vegan Apple Buckwheat Pancakes

Ingredients

  • 2 tbsp ground flaxseed + 6 tbsp water
  • 1 cup Pamela’s buckwheat pancake mix
  • 2 tbsp coconut oil, melted (or oil of choice)
  • 1/2 cup apple cider (can sub almond milk)
  • 1/4 cup unsweetened vanilla almond milk
  • 1 tsp cinnamon
  • dash of nutmeg
  • For the topping:
  • 1 tbsp coconut oil
  • 2 medium apples cored and diced
  • 1 tbsp coconut sugar (or brown sugar)
  • 1/2 tsp cinnamon
  • pinch of salt
