Vietnamese Beef Noodle Soup

Ingredients

  • 1 tsp. coriander seeds
  • 1/2 cup coarsely chopped fresh basil, preferably Thai
  • 1/2 lb. eye of round beef steak, cut across the grain into slices 1/8 inch thick
  • 1/2 inch piece cinnamon stick
  • 1/4 lb. bean sprouts
  • 1/4 tsp. salt
  • 2 limes, quartered
  • 2 Tbs. canola oil
  • 3 1/2 tsp. Asian fish sauce
  • 3 inch piece fresh ginger, thinly sliced
  • 6 cups beef broth
  • 8 to 10 oz. rice vermicelli
