Zucchini Pancakes

Ingredients

  • 1. 3 large zucchini, grated
  • 2. 1/2 tsp salt
  • 3. 1/2 cup all-purpose flour
  • 4. 1/2 cup grated Parmesan cheese
  • 5. 1 large egg, beaten
  • 6. 2 cloves of garlic, minced
  • 7. salt and pepper to taste
  • 8. 2 Tbsp olive oil
  • 9. sour cream for serving
