Almond Joy Fondant Cake
This Almond Joy Fondant Cake features layers of moist almond-flavored cake, filled with rich chocolate ganache and coconut cream. Covered in smooth fondant, it is a delightful treat for any occasion, combining the classic flavors of almond, chocolate, and coconut in a beautifully crafted design.

Ingredients
- 2 cups All-purpose flour
- 1 1/2 cups Granulated sugar
- 1 cup unsalted butter
- 4 large Eggs
- 2 teaspoons Almond extract
- 1 tablespoon Baking powder
- 1/2 teaspoon salt
- 1 cup coconut cream
- 8 ounces dark chocolate
- 1/2 cup heavy cream
- 1 pound fondant
- 1/2 cup sliced almonds
Instructions

Step 1:
Preheat the oven to 350°F (175°C). In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the almond extract.

In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.

Divide the batter evenly between two greased 9-inch round cake pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

In a small saucepan, heat the heavy cream until just simmering. Remove from heat and add the chopped dark chocolate. Stir until smooth and let cool slightly.

Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of coconut cream on top, followed by a layer of chocolate ganache. Place the second cake layer on top and repeat the process.

Roll out the fondant on a clean surface and cover the entire cake, smoothing it out as you go. Trim any excess fondant from the bottom.
