Cassis and Vanilla Bean Mousse Cake

Ingredients
- 1 vanilla bean
- 2 cups heavy cream
- 3/4 cup sugar
- 2 tablespoons gelatin powder
- 1 cup Cassis berry puree
- 1/2 cup butter
- 4 Eggs
- 1 1/2 cups Flour
- 1 cup Mirror glaze
- 1 cup Fresh berries for garnish
Instructions

Step 1:
Split the vanilla bean and scrape the seeds into a bowl. Combine with heavy cream and sugar, then whip until soft peaks form.

Sprinkle gelatin over 1/4 cup of cold water and let it sit for 5 minutes to bloom.

Heat the bloomed gelatin until dissolved, then fold it into the whipped cream mixture.

In a saucepan, heat the cassis berry puree until warm, then stir in sugar and let it simmer for 10 minutes.
