Chai Spiced Coconut Cake

Ingredients
- 2 cups All-purpose flour
- 1 cup Granulated sugar
- 2 teaspoons Baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons chai spice blend
- 1 cup coconut milk
- 1/2 cup vegetable oil
- 3 large Eggs
- 1 teaspoon vanilla extract
- 1 cup shredded coconut
- 8 ounces cream cheese
- 2 cups powdered sugar
- 1 teaspoon coconut extract
Instructions

Step 1:
Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.

In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and chai spice blend.

In another bowl, mix the coconut milk, vegetable oil, eggs, and vanilla extract until well combined.

Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the shredded coconut.

Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
