Chia Seed and Blueberry Vegan Cake

- 1/4 cup chia seeds
- 3/4 cup water
- 1 1/2 cups All-purpose flour
- 1 tablespoon Baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup maple syrup
- 1/3 cup, melted coconut oil
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries

In a small bowl, mix chia seeds with water and let it sit for about 10 minutes until it forms a gel-like consistency.
