Chocolate Mint Surprise Cupcakes

Ingredients
- 1 1/2 cups All-purpose flour
- 1 cup Granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 tsp Baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 large Eggs
- 1 cup Milk
- 1/2 cup vegetable oil
- 1 tsp vanilla extract
- 1 cup boiling water
- 4 oz cream cheese
- 1 cup powdered sugar
- 1/2 tsp mint extract
- 1 cup heavy cream
- 1 cup semi-sweet chocolate chips
- for garnish crushed mint leaves
Instructions

Step 1:
Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.

In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

In another bowl, mix the eggs, milk, oil, and vanilla extract until well combined.

Add the wet ingredients to the dry ingredients and mix until just combined. Stir in the boiling water until the batter is smooth.

Pour the batter into the prepared cupcake liners, filling each about 2/3 full. Bake for 20-25 minutes or until a toothpick comes out clean.

In a bowl, beat the cream cheese until smooth. Gradually add the powdered sugar and mint extract, mixing until well combined.
