Ingredients
- 1/2 cup chia seeds
- 1 cup coconut milk
- 1/4 cup lime juice
- 1 cup Coconut flour
- 1/3 cup honey or maple syrup
- 1 tsp Baking powder
- 1/2 tsp salt
- 1/4 cup Coconut oil, melted
- 1 tsp vanilla extract
- 1 tbsp lime zest
Instructions

Step 1:
In a bowl, combine chia seeds and coconut milk. Stir well and let it sit for about 10 minutes until it thickens.

In a separate bowl, whisk together coconut flour, baking powder, and salt.

In another bowl, mix the thickened chia mixture, honey or maple syrup, melted coconut oil, vanilla extract, lime juice, and lime zest until well combined.

Preheat the oven to 350°F (175°C). Pour the batter into a greased cake pan and bake for 25-30 minutes or until a toothpick comes out clean.
