Coconut Lime Drip Cake
This Coconut Lime Drip Cake features layers of moist coconut sponge infused with zesty lime, topped with a smooth coconut cream frosting and a vibrant lime drip. Perfect for tropical celebrations or a refreshing dessert.

Ingredients
- 2 cups All-purpose flour
- 1 1/2 cups Granulated sugar
- 1 tablespoon Baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 4 large Eggs
- 1 cup coconut milk
- 2 tablespoons lime zest
- 1/4 cup lime juice
- 3 cups powdered sugar
- 1 cup heavy cream
- 1/2 cup coconut flakes
- a few drops green food coloring
Instructions

Step 1:
Preheat your oven to 350°F (175°C). In a large bowl, mix together the flour, sugar, baking powder, and salt.

In another bowl, cream the butter until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the coconut milk, lime zest, and lime juice.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Divide the batter evenly between two greased 9-inch round cake pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

In a large bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and continue to whip until stiff peaks form.

Place one cake layer on a serving plate. Spread a layer of frosting on top, then place the second cake layer on top and frost the top and sides of the cake.

In a small bowl, mix a few drops of green food coloring with a small amount of lime juice and powdered sugar to create a drizzle. Adjust the consistency as needed.
