Enchanted Forest Cupcakes

Ingredients
- 1 1/2 cups All-purpose flour
- 1 cup Granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 tsp Baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 large Eggs
- 1 cup Milk
- 1/2 cup vegetable oil
- 1 tsp vanilla extract
- 1 cup boiling water
- 2 tbsp matcha powder
- 1/2 cup butter
- 3 cups powdered sugar

Instructions

Step 1:
Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.

In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

In another bowl, whisk together the eggs, milk, oil, and vanilla extract until well combined.

Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Stir in the boiling water until the batter is smooth.

Pour the batter into the prepared cupcake liners, filling each about 2/3 full. Bake for 18-20 minutes or until a toothpick comes out clean.

In a bowl, beat the butter until creamy. Gradually add powdered sugar and matcha powder, mixing until smooth and fluffy.

Once the cupcakes are completely cool, frost them generously with the matcha frosting.
