Exquisite Pistachio Fondant Cake

Ingredients
- 1 cup, shelled pistachio nuts
- 2 cups All-purpose flour
- 1 1/2 cups Granulated sugar
- 1 cup, softened unsalted butter
- 4 large Eggs
- 2 teaspoons Baking powder
- 1/2 cup Milk
- 1 teaspoon vanilla extract
- 1 pound green fondant
- 1 teaspoon pistachio extract
Instructions

Step 1:
Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

In a large bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla and pistachio extracts.

In another bowl, whisk together the flour, baking powder, and ground pistachios. Gradually add this to the wet mixture, alternating with the milk, and mix until just combined.

Divide the batter evenly between the prepared cake pans and smooth the tops. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
