Mint Chocolate Fondant Delight

Ingredients
- 2 cups All-purpose flour
- 1 1/2 cups Granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons Baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large Eggs
- 1 cup Milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 teaspoon mint extract
- 1 pound mint-flavored fondant
- 1 cup chocolate ganache
- for garnish fresh mint leaves
Instructions

Step 1:
Preheat your oven to 350°F (175°C). In a large bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

Add the eggs, milk, vegetable oil, vanilla extract, and mint extract to the dry ingredients. Mix until well combined.

Carefully stir in the boiling water until the batter is smooth. The batter will be thin.

Pour the batter into two greased and floured 9-inch round cake pans. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.

Once baked, remove the cakes from the oven and let them cool in the pans for 10 minutes. Then transfer to a wire rack to cool completely.

In a saucepan, heat the chocolate ganache until smooth. Allow it to cool slightly before using.

Place one cake layer on a serving plate. Spread a layer of chocolate ganache on top, then place the second layer on top.

Roll out the mint-flavored fondant and cover the entire cake, smoothing it out as you go.
