Mocha Mint Delight Cake
Indulge in the rich flavors of our Mocha Mint Delight Cake, featuring layers of moist chocolate cake infused with espresso and a refreshing mint cream filling. Topped with a smooth chocolate ganache and garnished with mint leaves, this cake is perfect for any birthday celebration.

Ingredients
- 2 cups All-purpose flour
- 1 3/4 cups Granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons Baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 large Eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup hot brewed espresso
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon peppermint extract
- 8 ounces semisweet chocolate
- for garnish fresh mint leaves
Instructions

Step 1:
Preheat your oven to 350°F (175°C). In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.

Add eggs, milk, oil, and vanilla extract to the dry ingredients. Mix until well combined.

Stir in the hot brewed espresso until the batter is smooth.

Pour the batter into two greased 9-inch round cake pans. Bake for 30-35 minutes or until a toothpick comes out clean.

In a bowl, whip the heavy cream until soft peaks form. Gradually add powdered sugar and peppermint extract, and continue to whip until stiff peaks form.

Once the cakes are cool, place one layer on a serving plate. Spread a layer of mint cream filling on top, then place the second layer on top.

Melt the semisweet chocolate in a double boiler or microwave. Once melted, pour over the top of the cake, allowing it to drip down the sides.

Garnish the top of the cake with fresh mint leaves. Slice and serve to enjoy!
